I present the cousins leavened ancient Communion wafers read vegan gluten-free waffles accompanied by a fluffy mousse of aquafaba to strawberries.
They can be cooked in an electric waffle maker, in a baking mold, or even in a simple pan on the stove, will only change their shape but will always fluffy.
I love these waffles at breakfast accompanied by a lot of fruit and the aquafaba mousse which in this case I flavored with strawberry jam but can be different each time varying the type of jam or replacing the jam with cocoa.
Ingredients for 12 waffles:
- 220 g brown rice flour
- 85 g of coconut flour
- 180 g lemon marmalade (my sweetened with apple juice)
- 655 ml of sparkling water
- 2 tablespoons oil with a delicate flavor
- 1 teaspoon baking powder
- 2 g sodium bicarbonate
- 1 pinch of salt
Ingredients for the strawberry mousse aquafaba
- 60 ml aquafaba
- 2 tablespoons of jam from strawberries (mine contains only 20% of the rest of agave syrup is fruit)
Ingredients for the cocoa mousse aquafaba:
- 60 ml aquafaba
- 2 tablespoons coconut sugar
- 1/2 tablespoon cocoa unsweetened
How to prepare the waffles
Lightly grease the molds chosen for cooking waffles and heat the oven to 200 ° C.
Mix with a whisk flour baking powder, baking soda in a bowl to remove any small lump.
With the immersion blender mix sparkling water with lemon marmalade, oil, everything will mount slightly.
Pour the liquid ingredients of those dried by mixing with a spatula from the bottom up to not lose the entrapped air.
Put the dough into the molds and bake for 10-15 minutes, every oven can vary from a few minutes cooking, in my waffles are ready in 13 minutes.
