A merger of two culinary cultures the Japanese with sushi rice and the Italian more precisely Lombard with the filling of dried beef and cucumber accompanied by the sauce of radish leaves and green apple.

The sauce accompanying the sushi is one of many ways to cook the radish leaves that not everyone knows.

Ingredients for sushi:

  • 200 g rice for sushi or soups
  • 400 ml water
  • 300 g dried beef slices
  • 2 cucumbers
  • 1 tablespoon vinegar
  • 1 teaspoon agave syrup
  • 1/2 tsp salt
  • black sesame seeds to decorate

Ingredients for the radish leaves Sauce:

  • 100 g of radish leaves
  • 70 g green apple
  • 20 g of lemon juice
  • 1 pinch of salt

Ingredients for salad:

  • 2 bunches of radishes
  • 100 g of soy sprouts
  • extra virgin olive oil to taste
  • salt to taste

How to prepare sushi

Peel the cucumber.

With the help of the peeler cut into very thin strips in the longitudinal direction.

Do blanch in boiling salted water for 1 minute, cool quickly in a bowl with cold water.

Wash rice well under running water until the water is clear, drain and pour into a saucepan with 400 ml water.

Bring to a boil and cook for 10 minutes covered.

Remove the rice from the heat and let it rest in the pan for another 10 minutes.

Season the rice with the vinegar and agave syrup and salt, stirring well.

Spread rice in a square between two sheets of baking paper and let cool to room temperature.

When the rice is cold, cover it with the cucumber strips and over the cutlery strips bresaola slices.

Cut into small cubes with a knife.
