The salad, a dish considered for too long an complementary, modest, is a true protagonist that can represent all dishes.

Salads with vegetables, fruits nuts or seeds, herbs or aromas, exotic flavors, which create a sweet-salty-acid combination, lend themselves to the role of starter, stimulate interest and prepare for the following courses.

Alternative Reinforcement Salad

Ingredients for 4 people:

  • 40 g of crushed macadamia nuts
  • 24 pitted green and black olives
  • 16 small florets of cauliflower or green broccoli or Roman broccoli or a mix of 3
  • 8 anchovy fillets in oil
  • 2 layers of pickled pepper
  • 1 avocado
  • capers under salt
  • hemp seeds
  • 1/4 teaspoon of flaked chili
  • the zest of 1 organic lemon
  • 2 tablespoons of extra virgin olive oil

* Among the ingredients I did not mention the salt because the flavor is already found in capers and anchovies, I prefer not to abuse with the salt dose / daily, you taste and season to your taste.

Using a fine grater, grate the lemon rind; add the olive oil and the chili flakes.

Cut the pickled peppers and olives into small pieces.

Rinse the capers very well.

Peel the avocado, cut into cubes and sprinkle with lemon juice.

Divide the broccoli into very small florets (the rest preserve it for other recipes). Put the tops in a colander and pour over boiling water. Rinse with cold water until the broccoli has cooled.

In a bowl, pick the broccoli, olives, peppers, avocado, chopped anchovies, capers, chopped macadamia nuts; season with lemon oil and chilli oil emulsion.

Sprinkle the salad with hemp seeds.

A salad / fruit salad of fresh and dried fruit is a pleasant surprise that before or instead the dessert.

Ingredients for 4 people:

  • 250 g dates
  • 200 g grated coconut pulp (or 100 g of coconut flakes)
  • 100 g of ground natural peanuts
  • 4 oranges
  • a few tablespoons of orange juice

Wash dried and peeled the oranges live, over a bowl to collect the juice that the oranges will lose during this operation.
