PUDDING OF FENNEL, LEMON AND … LICORICE

A pudding two choices fennel and lemon or … fennel lemon and licorice?

The fennel has a very adaptable flavor, delicious for both sweet and savory recipes, it’s great with fruit acidity, adding it to lemon you get a sweet pudding with a very delicate citrus touch, if you like, licorice adds aromatic and emphasizes flavor of fennel.

Cherries add a touch of freshness and perfect acidity with or without liquorice.

Ingredients for 4 puddings

  • 200 g fennel
  • 26 g agave syrup
  • 20 g of cocoa butter
  • 3 g vanilla powder
  • 20 ml lemon juice
  • 100 ml of water
  • 3.6 g powdered agar agar
  • a pinch of salt

To decorate and serve

  • licorice
  • cherries

How to prepare puddings

Wash and cut the fennel pieces, I have excluded the green parts only for aesthetic choice (of course nothing will be wasted, they can be used for other recipes).

Dissolve the cocoa butter in bain-marie.

In a blender, stir the fennel with agave syrup, loose cocoa butter, lemon juice, vanilla, salt.

Dissolve the agar agar in a small amount of water to prevent the formation of lumps  gradually add the rest of the water  pour everything into a non-stick pan and put on the fire  stirring constantly simmer for 3 minutes  cool the agar gel agar agar a few minutes then mix it with the rest of the ingredients.

Fill the molds selected for your puddings with the mixture and put them in the refrigerator to solidify, it will take at least 2 hours.

At this point we are ready to decorate and flavor further our puddings, in my illustration I have decorated them in 3 different ways but above all with different doses of licorice, choose how much adds it depends on your personal taste.
