Have you ever stopped to think how whole grains can be “eclectic” as well as being good, healthy and economical?

This recipe is one of many examples to prove it, the original version of this cake is part of the Piedmont regional tradition and is made with rice and spinach, but you can find similar recipes in every Italian region prepared with other ingredients, surely born from the need to “make a virtue of necessity”, and come down to us thanks to the skill of those who have transformed the seemingly simple ingredients in large dishes.

I prepare in any season with any kind of whole grain and all kinds of leafy vegetables, so you fly your imagination and play with flavors and combinations.

Ingredients for 9 patties 6.5 cm in diameter:

  • 200 g buckwheat or other cooked cereal (about 60 g uncooked)
  • 75 g leafy vegetables (in my case red cabbage, kale, rainbow coasts)
  • 55 g leek
  • 2 eggs
  • 50 g walnuts
  • 1 tablespoon extra virgin olive oil
  • salt to taste.

How to prepare the patties

Preheat the oven to 170 ° C.

Chop the nuts coarsely with the function to the mixer impulses.

Wash very well the leek and chop coarsely, let it brown over low heat in a pan with extra virgin olive oil, add the leafy vegetables washed and coarsely chopped and cook for a few minutes.

With a whisk, beat the eggs with the salt.

If you have never cooked buckwheat used these little attentions: washed in running water buckwheat. Boil water equal to twice the weight of buckwheat (200 g buckwheat – 400 ml of water), add the buckwheat, cover the pan and cook over low heat for 20 minutes. If you want a stronger taste can toast it constantly turning it over, add the boiling water into the pan after roasting, cover the pot, completed the cooking over low heat for 20 minutes .

In a bowl combine the cooked buckwheat, the sauteed vegetables and eggs, mix very well.

The oiled baking molds where you will put to cook the patties, sprinkle with chopped walnuts part of, pour the mixture of buckwheat, level the surface of the patties with a spoon and sprinkle with chopped nuts.

Bake at 170 ° C until the patties are golden brown on the surface, in my case 15 minutes.
