FRUIT IN THE GLASS

Breakfast, brunch dessert, this fruit-tasting glass is perfect at any time.
A fast sweet to prepare with all kinds of fresh fruit, frozen, shell, dried, in jam, there is no limit to the imagination in this recipe.

In my case it was born like this: I had a series of delicious ingredients in a too small dose to do anything, by resorting to ideas from crude and vegan cooking I prepared a crispy base with buckwheat flakes, coconut and fruit Shell, and a delicious dense mousse thanks to the aid of cashew nut that rested in the fridge with the other ingredients for a few hours transformed my banana and jam.
My recipe is just a small example, use your favorite ingredients well with any kind of jam, cereal flakes, fresh or frozen fruit and nuts, the important thing is that they are quality products.

Ingredients for 1 glass

Cream

  • 90 g banana
  • 90 g lemon cream (I used my lemon cream but it goes well with lemon jam with no sugar added)
  • 45 g cashew noodles (ready or better still home-made)

Crisp base

  • 30 g Brazilian nuts
  • 12 g dried raisins
  • 4 g of coconut in flakes
  • 2 more frozen
  • 1 teaspoon of buckwheat flakes

How to prepare the cashew cream
Put the casks in soak for 4 hours, then rinse them well and pour the soak water.
At this point they are soft and it will be easy to grind them in a mixer and turn them into a cream, if it should serve help with little water, the cream should not be very soft, the softness will think the banana.

How to prepare fruit cream
Blend the banana with the jam, add the cashew noodle and shake again.

How to prepare crispy base
Simmer the dried raisins in lukewarm water for about 15 minutes and drain well.
In a blender mixer with the pulse function the buckwheat flakes and Brazilian nuts.
Apart from shredding raisins with freezing frozen.
In a bowl join all the ingredients including whole coconut flakes that will give you a crunchy extra touch.

How to make a glass
At the bottom of the glass, pour a thick layer of the crispy mixture  pour over the fruit cream ⇒ all at least 3 hours in the fridge to make it thicken so that you can decorate it even with small pieces of fruit without sinking.

In my photograph I deliberately decorated the glass with fruit designed to highlight how this recipe can be just a small example, embellish yourself as you like decorating.
