Donuts with sweet potato and green apple flavored with anise. Anise tastes very adaptable, perfect for sweet and savory dishes. They have crumb with a texture very soft and moist.

The dough is dairy free, gluten free, without egg.

They are delicious paired with smoked fish or fresh cheeses.

Ingredients for 25 donuts:

  • 100 g teff flour
  • 100 g brown rice flour
  • 200g grated sweet potato
  • 180 g grated green apple
  • lemon juice 1/2
  • 50 ml carbonated water
  • 8 g psyllium husks
  • 1 teaspoon yeast freeze-dried coffee
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon salt
  • 2 tablespoons anise seeds
  • 1 teaspoon maple syrup

How to prepare the donuts

In a bowl combine flour and psyllium husks, mix well with a whisk.

Heat to 30°C carbonated water add 1 teaspoon of maple syrup and the yeast powder, cover and let stand 15 minutes so that it can take action.

Whisk together the potato and grated apple.

Add the mixture to the flour, mix.

Add the yeast mixture, stir.

Add salt, 1 tablespoon anise seeds and 1 tablespoon of oil to the dough mix well then knead with your hands.

Leave the dough for 3 hours.

Divide the dough into 25 shares form of cords and then bend a horseshoe, then cross the ends over each other.

Lay the pretzels on a baking sheet covered with a sheet of baking paper, brush with water and decorate them with anise seeds remained.

Bake at 200 ° C for 15 minutes.
