A spoon dessert with a creamy consistency that melts in your mouth making you feel all the richness of chocolate and the freshness of orange peel

A dessert “zero waste” because we use the pulp and peel of the pumpkin, but it is also “without guilt” does not contain flour, dairy products, eggs and is sweetened by the sweet side of the pumpkin and dried fruit.

The low-calorie pumpkin with a low glycemic index, rich in fiber and vitamins, with its sweet taste allows us to use no other sugar than fruit, with its fibrous part it gives the right consistency without adding flour or eggs for thicken or tie.

If you read the ingredients, you may think that a dark chocolate with a 99% cocoa content is too bitter. The “function of flavors” suggests that the acidity of the orange peel and the flavor of the Tamari create a balance, refining the bitterness of dark chocolate, the result is a dessert with a full flavor where each ingredient is enhanced.

If you want you can add the crunchy note of coarsely chopped walnuts over the cake, but also pomegranate grains or small pieces of green apple.

Ingredients to cook the pumpkin:

  • 150 g  of pumpkin with peel (mine variety Delica)
  • 35 ml of water equal to 2 tablespoons + 1 teaspoon

How to cook the pumpkin:

We cook the pumpkin with very little water so as not to disperse its precious substances.

Cut the pumpkin into small pieces with the peel.

Pour it into a pot with water.

Cook for 30 minutes over low heat.

Pudding ingredients for 2 people:

  • 150 g pumpkin pureed with its peel (cooked with the peel)
  • 50 g of dates (without stone, you can also replace them with other types of dried fruit: prunes, apricots…)
  • 20 g of cocoa powder without sugar
  • 50 ml water
  • 50 g of almond cream (100% sugar-free)
  • 15 g of dark chocolate (mine 99% cocoa)
  • 5 ml of Tamari (or a pinch of salt)
  • grated rind of 1/4 orange

How to prepare the pudding:

Sift the cocoa.

Dip the dried fruit into the water to soften it, do not throw away the water you use for the soak you can use it for this recipe, for a smoothie, but also to drink it in purity.

If, like me, you use Medjoul dates they are so soft that they don’t require soaking.

Cut the dates into small pieces and blend them with water, Tamari or salt.

Melt the chocolate in a bain-marie.

In a bowl, add and mix the ingredients in this sequence after each addition:

  pureed pumpkin smoothie mixture of water, dates and Tamari   almonds cream  sieved cocoa orange peel.

Allow to cool in the fridge for at least 2 hours.
