The chia seeds when mixed with a liquid they swell a lot and help us create desserts of different consistencies.
But what is the correct relationship between liquids and chia seeds?
Much depends on the liquid you want to use, I suggest you my way of creating spoon desserts of different textures
- 18% chia seeds on the liquid (18 gr of chia seeds on 100 ml of liquid of your choice) It is the right choice for a thick and creamy pudding, especially if you use fatter milk such as coconut milk.
- 18% chia seeds on the liquid (18 gr of chia seeds on 100 ml of liquid of your choice) per create a medium level consistency.
- 9% chia seeds on the liquid (9 gr of chia seeds on 100 ml of liquid of your choice) t will give you a much softer chia pudding, to which you may also want to add cereal flakes.
Today I share the recipes of two puddings that I often prepare especially for “breakfast”. One fruit s pudding and one chocolate pudding, they are just the bases to be enriched with what you like most:
- fruits fresh and dried
- nuts
- oil seeds
- spices
- granola
I prepare them using an unfiltered cereal milk which makes the pudding particularly dense and not suitable for adding cereal flakes or muesli.

After the soaking time, the cereal flakes will be soft and can be blended with an immersion mixer. You can filter the milk by lining a colander with a tea towel, in this case I have not done it I preferred a denser milk. |
