A double pie stuffed with a fresh coffee cream. You can stuff the cake with other creams or enjoy separately the two bodies.

The cake is completely free of cereal flours admirably replaced by coconut flakes that give lightness and oleaginous fruits that give flavor and crispness.

The two bodies fitted by heating are soft and well leavened even without the support of baking powder.

The coffee cream is light because it is fat-free and dairy products and is sweetened only with sugars in banana.

Hazelnut cake for 8 people 28 cakes 4 cm diameter:

  • 100 g hazelnuts
  • 40 g coconut flakes
  • 10 g cocoa
  • 30 g sugar coconut
  • 2 eggs
  • a pinch of salt

Carrot cake for 8 people 28 cakes 4 cm diameter:

  • 120 g carrots
  • 40 g almond flour
  • 40 g coconut flakes
  • 15 g sugar coconut
  • 1 tablespoon olive oil
  • 2 eggs
  • a pinch of salt

Coffee cream:

  • 100 g banana
  • 100 g silken tofu
  • 1/2 teaspoon vanilla
  • 1 teaspoon instant coffee

How to prepare hazelnut cake

Chop the hazelnuts, shredded coconut, cocoa and salt in a mixer with the pulse mode.

In a small saucepan mix the egg and coconut sugar and put on the fire to warm quickly (up to 45 °), stirring constantly with a spatula.

Whip the mixture with a whisk until the mixture “writes”.

Stir in the whipped eggs to the dry ingredients, stirring from bottom to top with a spatula.

Pour the mixture into the molds from the oven oiled or lined with parchment paper.

Bake at 170 ° C for 25 minutes.

Allow to cool.

How to prepare carrot cake

Chop the carrots with the oil.

Combine chopped carrots to the almond flour, the coconut flakes and salt.

In a small saucepan mix the egg and coconut sugar and put on the fire to warm quickly (up to 45 °), stirring constantly with a spatula.

Whip the mixture with a whisk until the mixture “writes”.

Stir in the whipped eggs to the dry ingredients, stirring from bottom to top with a spatula.

How to prepare coffee cream

Dissolve a tablespoon of warm water and freeze-dried coffee to cool.

Blend the bananas with tofu and coffee.
