Softly muffled soft muffins are among the most delicious, easy and quick to prepare breakfasts, perfect for even the most busy people.
Ingredients for 24 small muffin or 12 normal muffin:
- 135 g lentils flour
- 95 g of flake coconut
- 45 g of uncooked cocoa
- 150 g dried cherries not sugary
- 25 g of dark chocolate (with a percentage of 85% cocoa as a minimum)
- 40 g of coconut oil (about 3 tablespoons)
- 80 g of coconut sugar
- 3 eggs
- 250 ml of coconut milk
- 4 g of sweet yeast (1 teaspoon)
- 1/2 teaspoon vanilla
How to prepare muffins
Lightly with the coconut oil, the molds chosen to cook your muffins, if you like, you can lined the molds with colored paper ribbons.
Preheat the oven at 180 ° C.
Dissolve chocolate at low temperature in coconut milk, let it cool to room temperature for a few minutes before adding it to the rest of the ingredients. In the meantime, sift the lentil flour with cocoa, maize and yeast, combine coconut flakes and vanilla.
Pour the melted chocolate now cooled in the dry ingredients and mix well.
Lightly put the eggs with the coconut sugar and add them to the dough. Now you can also combine the dried cherries (I cut them in pieces to distribute them better).
Your muffins are ready for the oven for 25 minutes at 180 ° C.
Let them cool well before removing them from the molds.
