PASTE OF DRIED FRUIT

The dried fruit is perfect for sweetening, soaked and pureed allows us to obtain paste delicious spreadable or as a substitute for white sugar in the preparation of desserts where also play a binder.

When the purchase is important to choose organic dried fruit that has not been a forced drying or the addition of preservatives, antimicrobials and substances to keep intact the original color of the fruit, the appearance of “bad” and the dark color bright and never can be the first guidance criteria.

The paste can be prepared with any kind of dried fruit dates, apricots, raisins, cranberries and so on.

The dates have a relatively neutral flavor that interferes less in the taste of sweets.

Ingredients for 800 g of paste:

  • 450 g of pitted dried dates

How to prepare the paste

Put the dates in a large bowl and cover them with water, mash with a weight, if necessary, so that they remain covered by the water completions.

Let them soak for 2 hours.

When dates are well softened, pour them into a mixer without their soaking water and blend to obtain a smooth paste, homogeneous and dense, only if it serves to add a small amount of water to soak.

It keeps in the refrigerator for 2 months in an airtight container.
