The live soups are are prepared with raw vegetables, whisk that can be thickened and completed in various ways, in this post I share with you my way to thicken with nuts or oil seeds.

Why introduce live soups in our diet?

To increase the daily consumption of vegetables, especially raw, essential for our health.

The raw vegetables retain all their intact nutritional properties. The ingredients of the soups are not overcooked but only smoothies and, if desired, “warmed” with the addition of warm water and heating spices such as: cinnamon, cardamom, cloves, cumin, turmeric, garam masala, black pepper, chili pepper, celery seed, mustard seed, ginger.

They are quick and easy to prepare even at the last minute.

So we avoid relying on ready-made products that very often contain fats and additives of questionable quality.

They can be an appetizer, a main course, an accompaniment.

As a main course they can also be completed with cooked ingredients such as cereals, fish, meat, sautéed vegetables … maybe giving new life to small kitchen leftovers.

How to prepare?

◇ 200 g of vegetables of your choice
◇ 200 ml of water
◇ 75 g of fruit or shell or oilseeds of your choice or a ready-made cream of 100% non-roasted, salted or sweetened fruit or oil seeds
◇ 1 tablespoon of extra virgin olive oil
◇ 1- 2 teaspoons of spices of your choice
◇ salt q.b. (optional)
◇ If you use whole fruits or oil seeds, soak them, drain them very well from the water and wash them.
◇ If you want your hot soup, heat the water to 45 ° C.
◇ Whisk all the ingredients together, and if necessary add more water to soften your soup.
