HOW TO PREPARE THE DRESSING
HAND PREPARATION WITH CREAM OF SEEDS OR OILY FRUITS ALREADY READY
Ingredients for 2 people:

- 2,5 tablespoons of 100% non-roasted nuts / oilseed cream, free from sugars or other additives (2 tablespoons for a fluid dressing – 2.5 tablespoons for a creamy dressing)
- 30 ml of water
- 1 tablespoon of vinegar or citrus juice
- 1/4 teaspoon of salt (optional).
◇ With a fork, mix the salt in the acidic part, in this way you will be sure that it will melt completely and spread evenly over all the ingredients of the salad.
◇ Gradually add the rest of the ingredients by mixing well.
◇ Now you can pour the dressing on the salad.
◇ Season, at the last minute, salads with tender leaflets that would become impregnated and become flabby. |
PREPARATION WITH MIXER OR BLENDER AND SEEDS OR WHOLE OILY FRUITS
Ingredients for 2 people:

- 30 g of whole nuts or oil seeds soaked and drained soak and drained (20 g for a fluid dressing – 30 g for a creamy dressing)
- 30 ml of water
- 1 tablespoon of vinegar or citrus juice
- 1/4 teaspoon of salt (optional).

Juice of Agave and Maple

- It has a more viscous consistency, the dose that I recommend adding to the base emulsion is indicative, it can vary according to the taste of the ingredients present in the salad to be seasoned:
1/2 teaspoon honey

Miso

- The miso, gives the “umami” taste to the emulsions:
the salt is replaced with 1 teaspoon of miso

Herbs
Smoothies with the rest of the ingredients:

- Soft-stemmed herbs (basil, chives, parsley, mint, coriander, dill) to be added just before serving the salad
- Hard-stemmed herbs (sage, rosemary, oregano, thyme) should be allowed to be infused with all the seasoning ingredients for an hour or more.
