“Frandura” one unleavened cake of potatoes, the recipe of the traditional cuisine of Liguria, once cooked in copper pans.
This is my version gluten enriched with ham and green olives.
Ingredients for 4 people:
- 5 potatoes
- 250 g brown rice flour
- 250 ml milk
- 2 tablespoons oil
- 1 teaspoon salt
- 100 g grated Parmesan cheese
- 70 g cooked ham sliced
- 10 green olives
How to prepare the cake of potatoes
Peel the potatoes, wash and cut into thin slices.
Cut into slices and olives.
On the bottom of the molds lined with baking paper arrange the slices of potatoes overlapping them slightly, add salt.
Cover the potatoes with a layer of ham and olives.
In a bowl pour the brown rice flour 50 g grated Parmesan cheese and salt.
Combine milk oil pour flush on the flour, mix until a consistent batter.
Pour the batter over the ham.
Sprinkle the batter with the rest of the grated parmesan.
Bake at 180 ° C for 30-35 minutes.
Serve the cake of potatoes warm.
