A sweet of green apples soft, has the consistency is the moisture of the cake of bread, but the bread was replaced by quinoa flakes, as well as the eggs have been replaced by chia seeds, this way we get a sweet free gluten dairy and without eggs sweetened with fruit sugars.
I love the slight acidity of green apples, if you do not like it you can replace them with any other type of apple.
Ingredients for 8 people:
- 1 kg green apples peeled
- 80 g of pineapple and lemon jam without sugar
- 50 g almonds
- 50 g flakes of quinoa
- 30 g raisins
- 1 tablespoon cocoa without sugar
- 3 tablespoons of chia seeds
- 9 tablespoons water
- zest of 1 organic orange untreated

- goji berries
- pineapple and lemon jam without sugar
How to prepare the sweet
Peel the apples and mix.
Chop almonds in a mixer using the pulse function.
Wash very well the orange, dry and grate the zest.
Place in a bowl quinoa flakes, ground almonds, cocoa, raisins and orange zest, mix well.
Add to the bowl of dry products the whisk to mix apples and let the dough rest for 30 minutes so as to rehydrate the quinoa flakes.
Mix 3 tablespoons of chia seeds with 9 tablespoons of water, mix well, these will be our eggs.
Combine in the mixture now rehydrated, the chia compound mix and let stand still for about 15 minutes so that the spanner can form the gel that will bind all the ingredients.
Lightly oil the pans from the oven, pour the mixture in a layer of about 1 cm leveling with a spatula.
Cook in preheated oven at 160 ° C for 1 hour.
