GLUTEN FREE WRAPS WITH CHOCOLATE MOUSSE

Wraps of fruits and vegetables without gluten and vegan. Stuffed crepes with a mousse of tofu and dark chocolate. Great for a nutritious breakfast.

Ingredients for 2 wraps 2 from 15 cm:

  • 83 g mango jam
  • 28 g zucchini just inside
  • 28 g peeled apple
  • 3 ml lemon juice
  • 26 g golden flaxseed
  • 1/4 teaspoon vanilla

Ingredients for the filling:

  • 60 g silken tofu
  • 1/2 banana
  • 30 g dark chocolate 90%
  • goji berries (optional)
  • cornflakes without sugar (optional)

How to prepare the wraps

Preheat oven to 150 ° C with the ventilated.

Even in this recipe we use the inside of the zucchini.

Peel the zucchini and apple, cut into small pieces and then blend them with mango jam lemon juice and vanilla.

Chop the golden flax seeds in a blender pulse to avoid overheat and to release their oil, turning them into a cream rather than a meal.

Combine flour flaxseed to the rest of the ingredients and blend until the mixture is smooth.

Form 2 wraps equal diameter of about 15 cm extending them with hands between a sheet of greaseproof paper and the film, ensuring not to make them of a thickness too thin.

Remove foil and bake for 7 minutes.

Turn them with the help of another sheet of parchment paper.

Cook again for 7 minutes.

Let cool before removing from the wraps sheets with parchment paper.

They can be frozen.

How to prepare the mousse

Blend the tofu with banana.

Melt chocolate in a double boiler.

Add the chocolate tofu.

I also added goji berries because I like the contrast with the tangy sweetness of the banana and sugar cereals to add a crunchy sensation.
